Florence’s Smothered Pork Chops are the ultimate comfort food

The chef’s pork chops recipe includes items found in most kitchen pantries: flour, onion powder, garlic powder, ground cayenne pepper, olive oil, chicken broth, buttermilk, salt, pepper, and of course, 3/4″ inch thick, bone-in pork chops.

And it’s an incredibly easy and quick weeknight meal. Dunk the chops in the flour, which has been seasoned with the powders and cayenne (“You really want to give this flour, coating, a lot of taste,” Florence says in the Food Network video for this recipe) and then cook over medium heat in hot oil.

Remove the chops when done and then mix chicken broth, flour, and buttermilk in the same skillet. This combination becomes a velvety sauce: “Just give them a bath in that delicious little gravy.”

Florence’s Pan-Seared Tuna with Avocado, Soy, Ginger, and Lime is a flavorful masterpiece

Packed with sweet, salty, and warm flavors, the chef’s pan-seared tuna is an elegant and quick dinner option. It’s a true done-in-minutes meal that’s meaty and yet light.

“I don’t think tuna is for special occasions,” Florence says in the recipe video. “You’ve got to treat yourself, you know? It’s soul-crushing to come home and have a cold bowl of cereal after a long day of work.”

The sushi-quality tuna steak is salted and peppered and placed in a searing hot pan with oil. Once it’s crusted on one side, it’s flipped onto its other side and drizzled with a few tablespoons of a simple vinaigrette made from cilantro leaves, olive oil, soy sauce, lime juice, jalapeno pepper, sugar, and grated ginger and garlic.

Plate the rare steak and top with chunks of diced avocado, followed by more of the flavorful vinaigrette. A restaurant-quality masterpiece ready in no time!
