Chrissy Teigen’s mom is here for all of your Super Bowl 55 needs. Vilailuck Teigen (aka “Pepper Thai”) knows that meat eaters love a good chicken wing recipe, so she shared her recipe for Thai crispy chicken wings just in time for your socially distant Super Bowl celebrations.

Pepper Teigen’s Thai Crispy Chicken Wings are from her upcoming cookbook

Teigen has her Cravings series, and now, Pepper is releasing a cookbook of her own! Her crispy chicken wings recipe is part of The Pepper Thai Cookbook: Family Recipes from Everyone’s Favorite Thai Mom, which comes out in April 2021. The famous grandma said she’s eager to introduce Thai flavors to her readers.

“I love introducing Thai flavors to everyone through my food,” she told Travel + Leisure. “My recipes are so simple to make, delicious, and fun!”

According to Us Weekly, an excerpt from the book, she revealed Teigen burns her fingers trying to eat them too quickly and John Legend wants them whenever he’s watching football. She said:

“Crispy, juicy wings [seasoned] with pepper and fish sauce are the king of party snacks in our house: Miles and Luna ask for seconds. John [Legend] craves them when he’s watching football. Chrissy burns her fingers because she can’t wait long enough for them to cool.”

Pepper’s Thai crispy chicken wings recipe is super easy to follow, and you’ll be glad you have them on your Super Bowl menu. Here’s everything you’ll need:

Ingredients

  • 3 pounds chicken wings, patted dry
  • 1⁄4 cup plus 3 tablespoons fish sauce
  • 1⁄2 tablespoon garlic powder
  • 1⁄2 tablespoon ground white pepper
  • 1⁄2 teaspoon kosher salt
  • Vegetable oil, for deep-fry
  • 3⁄4 cup all-purpose flour
  • 2 tablespoons cornstarch or tapioca flour
  • 2 teaspoons baking powder
  • Thai sweet chili sauce or Spicy Garlic-Lime Fish sauce for dipping

How to make Pepper Teigen’s Thai crispy chicken wings

To start, put the chicken wings in a large bowl, and add the fish sauce, garlic powder, white pepper, and salt. Toss to coat the wings, and then either set aside at room temperature for 15 minutes, or refrigerate for 30 minutes.

While the chicken is marinating, fill a wok (if you have one, if not a large pot or deep skillet will suffice) with 2 inches of oil. You can add more oil, but just make sure to leave a few inches of clearance from the rim. Heat over medium heat to 370 degrees. You can test the temperature with a deep-fry thermometer, or throw a small piece of bread or a grain of rice into the oil. You know it’s ready if it sizzles immediately without burning.

Have a plate lined with paper towels nearby, or a wire rack set in a sheet pan for this next step. While the oil is heating up, whisk flour with cornstarch and baking powder, and then sprinkle that mixture over the wings. Toss the chicken and dry ingredient mixture until a paste forms. Each wing should be evenly coated.

Once the oil is hot and ready, add four to five wings to the pan and fry them until they are a deep golden brown. The color of the crust will signal when the chicken is cooked all the way through. You’ll want to stay by the pan the whole time the wings are cooking.

Once done, drain them on the wire rack or with the paper towels, and repeat with the rest of the wings. Use the chili sauce or the spicy fish sauce for dipping, and enjoy!
