Giada De Laurentiis makes an easy vegetarian baked pasta recipe loaded with roasted vegetables and cheese. The Food Network host’s easy recipe is a perfect make-ahead dish that’s a total crowd-pleaser.

Giada De Laurentiis’ pasta recipe is loaded with healthy ingredients

On Jan. 11, De Laurentiis posted a photo of the delicious baked penne with roasted vegetables recipe on her Giadzy Instagram account. “Resolving to eat more veggies this year? There is no way to eat a variety of vegetables as delicious as roasting them, tossing them with pasta, and baking to crispy perfection,” she wrote in the caption.

The recipe was featured on the Today show website in January 2021. “This recipe is a great way to get all your veggies in with tons of flavor,” De Laurentiis noted in the recipe introduction.

She continued, “It’s a great alternative entrée for non-meat eaters because it’s an elegant dish with lots of colors and textures.” De Laurentiis explained that it’s easy to assemble ahead of time and cook when the guests arrive.

She added, “It’s a real crowd-pleaser all around.”

How to make Giada De Laurentiis’ penne with roasted vegetables

De Laurentiis demonstrated how to make her easy weeknight dinner idea on an episode of Everyday Italian. “Baked pastas are super easy and my penne with roasted vegetables is no exception,” she explained. “Red peppers, yellow squash, and green zucchini are the heart of this dish. I mix them with pasta, marinara sauce, and three cheeses. Then I just put them in the oven.”

The Food Network host added, “Penne with roasted vegetables comes out perfectly cooked and bursting with different flavors.”

She cut up mushrooms, summer squash, zucchini, red bell peppers, and onions. “The secret to roasting these vegetables is cutting them approximately the all same size,” De Laurentiis explained. “That way, they cook evenly in the oven.”

“The thing that makes these dishes so much fun is the bountifulness of all of the vegetables and the colors,” De Laurentiis explained.

Next, the Food Network star placed the vegetables on a foil-lined baking sheet and drizzled on olive oil. Then she sprinkled salt, pepper, and herbs de Provence over the veggies and tossed everything together.

She roasted the vegetables in a 450 degree Fahrenheit oven for 15 minutes.

The oven does the rest of the work

De Laurentiis only cooked the pasta for 6 minutes in boiling water, drained it, and placed it in a bowl. She added tomato sauce, frozen peas, fontina cheese, and smoked mozzarella cheese.

The Everyday Italian host added the roasted vegetables to the pasta and tossed all of the ingredients together. De Laurentiis put everything in a buttered baking dish, sprinkled parmesan cheese over the top, and dotted it with butter.

She baked the pasta in a 450 degree Fahrenheit oven for 25 minutes.
