‘Girl Meets Farm’ Star Molly Yeh’s Calls Chicken Schnitzel ‘One of My Top 5 Favorite Foods’
Molly Yeh is a big fan of foods that remind her of memorable moments in her life. One of her most beloved food memories involves Chicken Schnitzel. This chicken cutlet pounded thin, fried until crispy, and served with lemon and parsley is one of those tasty treats that the Girl Meets Farm and Food Network star cannot get enough of. Thankfully she wrote down her recipe to share with everyone else who loves chicken nuggets but wanted a more adult version that is company friendly and oh-so-good.
What is Chicken Schnitzel?
Essentially it is the same as a fried chicken cutlet. However, according to the website The Cookful, the difference is how it is tenderized.
Schnitzel is sliced meat that is tenderized or run through a cubing steak machine and is a term is applied to any cut of meat prepared in this way.
Schnitzel is a Bavarian term for lean meat, typically breaded in an egg and flour combo and fried.
Molly Yeh’s love affair with Schnitzel occurred while attending college in New York City
In her blog titled My Name is Yeh, the Food Network personality spoke of her love affair with this particular dish.
“Did I ever tell you about the time I won free schnitzel for an entire month?” she questioned her readers.
“Back when I was an Upper West Side bicycle-riding college person (and also a “restaurant blogger”), one of my twelve Twitter accounts became the 5,000th follower of the local schnitzel truck. The prize was free schnitzel for a month.
“It was one of the greatest, most delicious, most water retained months of my life,” Yeh concluded.

To make Chicken Schnitzel Yeh’s way, you first must assemble your ingredients.
These include flavorless oil for deep-frying, all-purpose flour, eggs, panko breadcrumbs, paprika, salt and pepper, boneless and skinless chicken breasts, and lemon wedges.
Add about 1 1/2 inches of oil into a large, heavy pot or high-sided skillet. Heat until hot enough to fry cutlets.
Set up a dredging station, including a bowl for flour, eggs, and plain breadcrumbs.
Season the breadcrumbs with paprika, salt, and pepper.
Place a chicken cutlet between two pieces of plastic wrap. Using a rolling pin, pound the meat until it is very thin. Try not to tear it. Continue until all chicken is pounded thin.
Coat chicken cutlets in flour, followed by egg and breadcrumbs.
Fry until golden brown. Serve with lemon wedges and a delicious side such as Cheesy Scalloped Potatoes.
