Joanna Gaines is devoted to creating recipes that will keep her brood of six coming back for more. This means incorporating healthy items such as sweet potatoes into a casserole with a lip-smacking topping that pleases even the pickiest eater’s palate. This dish is a favorite of the Gaines family during the holidays, but it can be made any time of the year as a side to your favorite protein or other veggie dishes.
Joanna Gaines reveals her favorite holiday sides
In a post shared on her Magnolia website, Gaines spoke of the sides in regular rotation at her home during the holiday season.
“With the holidays in full swing, I wanted to share a few of my favorite side dishes that highlight the flavors we all know and love this time of year,” she began.
“For our savory sides, I’m making a creamy batch of Mac and Cheese and a homemade version of the classic Green Bean Casserole. On the sweeter side, I’m making my Southern Sweet Potato Casserole, which could pass as dessert,” Gaines wrote.
The 3-ingredient, lip-smacking topping that sends this casserole over the top
Gaines came up with a topping that included cornflakes mixed with pecans and marshmallows to finish this delicious dish.
The recipe can be found in her cookbook Magnolia Table, A Collection of Recipes for Gathering, Volume 2.
The side includes a mashed sweet potato base topped with brown sugar, pecans, and marshmallows and baked until golden brown.
What are the ingredients?
The ingredients for this delicious casserole include 5 pounds of sweet potatoes, a cup of sugar, heavy cream, a stick of unsalted butter, milk, eggs, vanilla, and salt.
The topping includes 1 cup of cornflakes, chopped pecans, light brown sugar, unsalted butter, and mini marshmallows.
How does Joanna Gaines make this delicious casserole?
Preheat the oven to 450 degrees.
Poke holes in each sweet potato with a fork, place them on a foil-lined sheet pan, and roast until tender. This should take over one hour.
Reduce the oven temperature to 375 degrees. Grease a 9 x 13-inch baking dish with cooking spray.
Peel the cooked potatoes. Add them to a large bowl, breaking them into pieces. Add sugar, cream, butter, milk, eggs, vanilla, and salt.
Using a handheld mixer, whip the potato mixture until well combined.
Pour the mixture into the baking dish.
Mix the topping in a separate bowl, combine cornflakes, pecans, brown sugar, and melted butter. Sprinkle mixture over mashed sweet potatoes and bake until golden brown. This should take 20 minutes.
Remove pan from oven—place mini-marshmallows on top of the casserole.
Turn the broiler on and place the pan under the heating element watching for the candy to evenly brown. Remove from oven and serve.
Turn the oven to broil and position an oven rack 4 to 5 inches from the broiler element.
Sprinkle the marshmallows on top of the casserole and broil until the marshmallows begin to brown and bubble, about 1 minute, observing. Serve hot.
