As with royal couples before them, Prince William and Kate Middleton opted for a traditional fruitcake for their wedding cake. People Magazine published details of a story by royal baker Fiona Cairns, who shared her story in the documentary The Day Will and Kate Got Married.
The confection consisted of eight tiers and was three feet tall. However, to get the cake inside the Picture Gallery in Buckingham Palace, they had to remove a door.
Although the door was ultimately replaced in its proper spot, the team found themselves face-to-face with Queen Elizabeth. She subsequently remarked on the mishap that stuck with Cairns for years after.

According to royal baker Fiona Cairns, Queen Elizabeth could have been upset at how the bakery team had to deconstruct her doorway to fit the cake into the room. However, the queen had quite the opposite response.
Queen Elizabeth told Cairns, “I can remember her saying, ‘I hear that you’ve been dismantling my house.'”
The conversation continued, “And I said to her, ‘Well, we had to take a door down from the room below for the trolley to go through with the cake.’ But it was all put back, so in the end, it was fine.”

According to a story by Brides Magazine, Kate Middleton and Prince William’s wedding cake was a traditional royal fruitcake weighing a whopping 220 pounds. Thus, Brides described the traditional fruitcake recipe as “baked with plenty of dried fruit, chopped walnuts, and chopped dates to produce a hearty cake.”
The story continued, “The dried fruits are reconstituted by soaking in alcohol or fruit juices to add moisture before being incorporated into a sugar, spices, butter, and flour batter. Then, the cake is typically covered in marzipan and finished with royal icing. It’s a harder frosting that produces a beautifully smooth texture.”
People Magazine reported that the cake’s design consisted of 17 different flowers and leaves. These included blooms important to the couple. Represented were lily of the valley, Irish shamrock, English rose, Scottish thistle, and Welsh daffodil.
