Many Reviewers Liked Valerie Bertinelli’s Salad but Went Ga-Ga for Her Dressing: ‘Salad’s Good but the Dressing Is Crack’
It’s that time of year when a light and fresh salad is what’s on the menu for a meal on any given day.
Packed with silky avocado chunks and summery corn off the grill, this salad from Food Network star Valerie Bertinelli is made deliciously complete with her creamy, flavorful green goddess dressing.
While many reviewers politely praised her salad recipe, its unforgettable dressing really wowed them.
Bertinelli’s salad has just five ingredients
The former One Day at a Time star’s salad recipe comes together with just a handful of ingredients: three ears of corn, a jalapeno pepper, vegetable oil, chopped avocado, and chopped romaine lettuce.
The corn ears and the jalapeno are rubbed with the oil and charred on a grill, “about six minutes for the jalapeno, and 12 minutes for the corn.”
It should be noted that in the Food Network video, link below, for this recipe, Bertinelli chars the jalapeno over a burner on her stove. She advises “keeping an eye on it … turning it to char on all of the sides.” Then she took it “off the heat, put it in a bowl, covered it with plastic wrap so it would steam up until it’s cool enough for me to take the skin off.”
The corn kernels are scraped off the grilled ears and tossed with the chopped avocado and lettuce.
Valerie Bertinelli’s green goddess dressing is perfect for this salad
The jalapeno goes into the green goddess dressing along with mayonnaise, buttermilk (“It’s got that little zingy-zingy tang-tang to it, love it”), flat-leaf parsley, fresh chives, lemon juice, dill, an anchovy fillet (“Because a little goes a long way”), a garlic clove, and salt. It’s all combined in a blender until smooth.
“This is the perfect dressing for my avocado and grilled corn salad,” the Food Network personality says in the video.
Toss “just enough” of this dressing with the salad to coat it and be sure to season it. The rest of the dressing can be refrigerated, Bertinelli says, “in an airtight container for up to one week.”
