Ree Drummond’s Tuscan Chicken Soup Recipe Is Perfect Comfort Food

Drummond demonstrated how to make the easy hearty soup on an episode of The Pioneer Woman focused on “Drummond comfort favorites.”
“Is there anything better in the world than comfort food?” she asked. “Comfort food is the best. It’s warm. It’s cozy. It reminds us of home.”
Drummond continued, “And I am going to make one of my favorite comfort food soups because, to me, soup itself is the ultimate comfort food.”
She added, “So I am making Tuscan chicken soup. It’s just a beautiful classic chicken soup with beans and tomatoes. And the best thing is — it has bread in it. You gotta trust me on this.”
Drummond cut boneless, skinless chicken thighs into pieces and added the meat to a pot with butter, oil, and diced onions. She seasoned it with salt and pepper, then stirred and cooked the mixture for five minutes. Drummond added garlic, oregano, and tomato paste.
“This is one of those soups that’s perfect for just kind of a weeknight dinner,” she explained. “Or if you’re having company over, it’s good enough for guests.”

Drummond added a can of tomato puree, a can of diced tomatoes, chicken broth, cannellini beans, and honey “just to be sassy,” she explained. Then she let the soup cook on high heat for 10 minutes. Finally, The PIoneer Woman star added canned quartered artichoke hearts.
“And that’s what I love about this soup is it’s just so easy,” she explained.
Drummond had toasted crusty bread slices to add to the soup. “This is basically kind of like Tuscan chicken bread soup,” she said as she ripped a slice of bread into pieces and placed it in a bowl. After she ladled the soup on top of the bread she had a couple of delicious additions.
The Food Network host cut burrata cheese in half and placed it on the soup, then sprinkled on oregano before serving.
