Drummond’s peanut butter blossom cookies, or Quick Peanut Butter-Chocolate Cookies, can’t get much simpler. Drummond shared the recipe details on her official Pioneer Woman website in September 2020. According to the recipe, they’re made with only two ingredients: storebought cookie dough and miniature peanut butter cups. 

Making the dough, and even the peanut butter cups, is certainly an option. However, as fans of The Pioneer Woman probably already know, the cookbook author often embraces shortcuts in the kitchen. Drummond has everything from Thanksgiving dinner shortcuts to “superhero shortcuts” for an easy meal.

How to make Drummond’s peanut butter chocolate cookies

With the ingredient list being so simple, it may come as no surprise that there isn’t much to making Drummond’s peanut butter chocolate cookies. Per her instructions, they’re made in two steps. 

To start, Drummond heats the oven to 350 degrees Fahrenheit. While it heats up she slices the cookie dough into six, one-inch thick rounds. From there she quarters each round. 

Next, she fills a mini muffin pan with the dough being sure to press it down gently. Drummond then bakes the dough “until just set” which should take nine to 11 minutes. 

Drummond pulls the mini muffin pan out of the oven when the dough’s set. While the dough’s still warm, she pushes a peanut butter cup into each cookie. 

Then it’s time to wait. The Super Easy cookbook author lets the cookies cool in the pan. Once they’ve cooled down and set, she carefully removes them from the pan with a spoon. 

In total, the entire process of making a batch of Drummond’s peanut butter chocolate cookies should take 40 minutes. 15 minutes of prep and another 25 minutes for baking and cooling. That means with only two ingredients and a mini muffin pan, the cookies can be on the table in just over the time it takes to watch an episode of The Pioneer Woman

For a slightly more complex Pioneer Woman peanut butter cookie Drummond has a recipe that calls for five ingredients. Her Easiest Ever Peanut Butter Cookies are made using crunchy peanut butter, brown sugar, eggs, chocolate chips, and flaky sea salt.

Drummond combines all of the ingredients except the salt in a standing mixer. Then she stirs in the chocolate chips with a wooden spoon and the dough is done. 

Using wet hands she forms 12 balls with the cookie dough. After lightly pressing the top of each cookie with a fork she sprinkles each one with salt and puts them in the oven to bake. 

About 15 minutes later she removes the cookies from the oven and lets them cool on the baking sheet.
