Featured on the “Let’s Get Toasted” episode of The Pioneer Woman, Drummond’s mushroom ricotta toast is a simple appetizer. Yes, it has three elements — the mushrooms, ricotta, and toast — but it takes only minutes to prepare. 

According to Food Network, it’s classified as an “easy” recipe that takes 15 minutes total to make from start to finish. Drummond prepares the mushrooms, followed by the ricotta cheese mixture and the garlic toast until she finally puts them all together to make bite-sized appetizers. 

On the ingredient list, besides the obvious mushrooms, ricotta, and toast is garlic, shallots, olive oil, freshly grated Parmesan cheese, lemon, and arugula.

How to make the meatless Pioneer Woman appetizer

Drummond’s Mushroom Ricotta Toast is made in three easy steps. To start, the Super Easy cookbook author heats olive oil in a large saute pan. She tosses in sliced shallots and cooks them for about a minute or until they’re translucent. 

Next are the mushrooms. Drummond uses a mixture of oyster, cremini, white, and shiitake. She adds them to the pan and waits for them to cook down, becoming golden brown in color. Note: It’s OK if there’s liquid in the pan, it’s from the mushrooms. 

Then it’s time to add flavor with seasonings. Drummonds tosses in chopped fresh marjoram and minced garlic along with a pinch of salt and pepper. 

While everything in the saute pan continues cooking, the next element of Drummond’s mushroom ricotta toast is prepared. She puts ricotta, freshly grated Parmesan cheese, lemon juice, and lemon zest in the bowl of a food processor. After a sprinkling of salt and pepper, she pulses it all together until creamy. 

Finally, it’s time for assembly. The Food Network star spreads the whipped ricotta on slices of toasted Italian bread. Next, she tosses arugula together with salt and pepper. Then she arranges the mushrooms on the bread before topping each one with arugula.

One person served them as a Thanksgiving appetizer and said they “will definitely make these again.” 

Another said they “made this for dinner last night and was it ever good!” They also highlighted how all the ingredients came together and complement. 

Another reviewer, who made it as an appetizer for a party, said it was a hit with the adults who all “wanted the recipe.” They continued, saying the dish is just as “amazing” as the original using portobello and white mushrooms instead of the four-mushroom mixture that’s called for in the recipe.

Another reviewer even made it for breakfast to rave reviews and comments about it being “easy, delicious gourmet toast.”
