Calling all peanut butter and chocolate lovers. Ree Drummond’s Peanut Butter Cup Bites are a simple Pioneer Woman dessert or snack. However they’re served, the Food Network star describes them as the “perfect combination of healthy and treat.” Simply pull them out of the freezer whenever the mood strikes.

Featured on the “Haley’s Having a Baby” episode of Food Network’s Pioneer Woman, Drummond’s Peanut Butter Cup Bites are one of the freezer foods she makes for her assistant who recently had a baby. 

“They’ll be perfect for Haley to snack on,” she said on her way to meet the Drummond babysitter-turned-Pioneer Woman employee. “She just needs to let them thaw for 10 minutes, and then they’re ready to eat.” 

Along with the Peanut Butter Cup Bites, Drummond gave Haley a cooler full of Everything Sugar Cookie (Dough!), White Bean and Sausage Soup, and Mean Green Pasta Casserole.

The Pioneer Woman says her Peanut Butter Cup Bites are ‘really easy to make’

There’s not much to making Drummond’s Peanut Butter Cup Bites, which is probably why she considers them “really easy to make.” 

“They’re the perfect combination of healthy and treat,” she says while whipping up a batch at the “Lodge” on the Drummond ranch where The Pioneer Woman is filmed.

Per her recipe instructions via Food Network, Drummond’s Peanut Butter Cup Bites are made with only seven ingredients. A combination of oats, peanut butter (she uses crunchy), honey, flaxseed, coconut oil, and salt make up the bites. As for the chocolate coating on the outside, it’s made with a simple mixture of coconut oil and semisweet chocolate.

So how are Drummond’s Peanut Butter Cup Bites made? First, she puts all the ingredients for the bites in the bowl of a stand mixer. Next, she mixes them together until combined. Then it’s the time-consuming part. Drummond scoops tablespoon-size balls of dough and puts them on a parchment-lined sheet pan. 

Next, she puts the balls in the freezer to firm up for 15 minutes. Meanwhile, the Super Easy cookbook author makes the chocolate coating. She melts semisweet chocolate and coconut oil until smooth using a double boiler. “Easy, right?” she says. 

The cooking show host then removes the balls from the freezer and coats each one in the chocolate and coconut oil mixture. She returns them to the baking sheet before putting them back in the freezer to firm up.

When the chocolate has set, Drummond’s Peanut Butter Bites are transferred to a resealable plastic bag and kept in the freezer.
