Anderson’s Cheesy Mushroom and Broccoli Casserole is a flavorful vegetarian option

With meaty mushrooms, onions, garlic, broccoli, shredded cheese, and rice, Anderson’s quick and easy casserole comes together in a flash.

To make this filling meal, prepare a roux with butter and flour, adding the mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream, and chicken stock. Stir into this mixture the frozen broccoli (thawed), shredded cheese, and cooked rice. It’s all poured into a buttered casserole dish and sprinkled with more cheese. Bake until it’s golden and prepare for no leftovers!
