‘The Pioneer Woman’: Ree Drummond’s BBQ Chicken Flatbread Pizza Recipe Is Ready in Minutes
Ree Drummond makes a spicy BBQ chicken flatbread pizza recipe based on a favorite from her college years. The Pioneer Woman star uses some shortcuts to make the quick meal in just 20 minutes.
Ree Drummond’s BBQ chicken flatbread recipe is inspired by California Pizza Kitchen
Drummond wrote about her BBQ chicken pizza recipe in a 2010 blog post on The Pioneer Woman website. The Food Network host explained the inspiration for her recipe.
“When I was in college, California Pizza Kitchen was the height of awesomeness for my friends and me,” she wrote. “A vegetarian at the time, I loved their deliciously thin and creatively adorned pizzas more than life itself. CPK was one of my favorite things.”
Drummond continued, “In the years since leaving California, I’ve created occasional knockoffs of some of the CPK pizza varieties I remember, since there’s no CPK within at least 500 miles of the ranch — maybe even farther. Today I want to share my rendering of their very popular BBQ chicken pizza, which was a favorite of Jeff, my (platonic) roommate from Taiwan.”
She advised changing up the recipe according to your preferences, noting, “Just use the basic recipe as a starting point and have some fun with it!”
How to make Ree Drummond’s barbecue chicken flatbread pizza
Drummond made her BBQ chicken flatbread recipe on an episode of The Pioneer Woman featuring spicy recipes. “I’m going to make a spicy barbecue chicken flatbread,” she said. “Kind of like little individual pizzas.”
Drummond combined shredded rotisserie chicken and bottled barbecue sauce in a bowl and used store-bought flatbread for the pizza crust. “You can use naan, you can use actual pizza crusts, you can use pita,” she said. “Whatever floats your boat.”
The Food Network host spooned barbecue sauce on the flatbreads and added shredded provolone cheese, chicken, red onion, sliced jalapenos, and a bit of the jalapeno juice. For extra heat, she added thinly sliced habanero peppers.
“Guys, proceed with caution,” she warned. “These will grow some hair on your chest really quick. I sliced them really thin and tried to take some of the seeds out. You want to use gloves when you’re slicing and deseeding habanero peppers.”
Drummond baked the pizza in a 400 degree Fahrenheit oven until the cheese melted and the edges started to crisp.

Drummond drizzled bottled ranch dressing over the top of the flatbreads after removing them from the oven. “You could even spice this up and put some chipotle adobo sauce from chipotle peppers into the ranch and stir it up,” she said. “But I decided we’ve had enough spice.”
Drummond sprinkled cilantro over the top of the pizzas. “This is such a great combination — barbecue sauce, chicken, jalapenos, cilantro, red onion,” she said. “I think this would be a great thing to serve at just a casual party with friends. You could grill them on the grill. Delicious.”
