Chicken salad is like a box of chocolates. You never know what you’re gonna git. Everyone likes chicken salad different ways: ground up and fine, large and chunky, chock full of onions, nuts, and any number of other ingredients. Because of the innumerable combinations of chicken salad, I won’t even consider claiming that this recipe is “the best” or “the greatest.”
Chicken salad is way too subjective for that. What I will do is show you chicken salad…the way I like it. And the great thing about this recipe is, you can use the steps and ingredients as a basis for your own unique recipe, adding and subtracting whatever makes you skirt fly up.
Ree Drummond’s favorite chicken salad recipe
In the summer 2020 issue of The Pioneer Woman magazine, a curious reader wrote in to ask Drummond about her go-to chicken salad recipe. The Food Network star says her favorite is a basic chicken salad with light and dark meat.
“My very favorite basic chicken salad has a mix of light and dark meat, a creamy mayo-yogurt dressing with fresh dill and add-ins like red grapes and slivered almonds,” says Drummond. “But the chicken salad I’d choose time and again is my curried chicken salad: It’s based on my original but has curry powder and golden raisins, and I swapped the dill for cilantro. It’s so flavorful!”
Ree Drummond’s big chicken salad accomplishment
Back in 2011, Drummond told her readers about a big accomplishment. She says she managed to finally take decent photos of her chicken salad. Drummond showed comparisons between 2008 and 2011. One big difference between then and now is that the “accidental country girl” pays more attention to lighting and color balance. At the end of her blog entry, Drummond encourages her fans to “keep taking photos.”
