‘The Pioneer Woman’: Ree Drummond’s Chicken Tortilla Soup Is the Perfect Spicy Comfort Food
Ree Drummond makes an easy chicken tortilla soup recipe that’s loaded with delicious flavors. The Pioneer Woman star’s soup is the perfect comfort food for anyone who likes a little heat.
Ree Drummond’s chicken tortilla soup is a hearty meal idea
Drummond made the chicken tortilla soup recipe on an episode of The Pioneer Woman featuring dishes she made for her family film crew. She made the soup for her son-in-law Mauricio and didn’t skimp on the spicy flavors.
“I am making a wonderful batch of chicken tortilla soup and a kit with all the fixings,” she explained. “And there was only one person in this room that I thought of that would really, really love this … Mauricio has voiced to me in the past that chicken tortilla soup is one of his favorite things in the world. So I’m hoping this lives up to his expectation.”
The Pioneer Woman star cooked chicken thighs in a dutch oven and removed them from the pan. Then she added onion, garlic, red bell peppers, and cooked them for 3 minutes before adding tomato paste.
“I love chicken tortilla soup,” Drummond noted. “That is one of the many food things that Maurcio and I have in common.”
‘The Pioneer Woman’ star serves the soup with ‘fixins’
She added chicken broth and water to the pot and increased the heat. Then Drummond added diced tomatoes with green chilies, green chilies, chopped chipotle peppers with adobo sauce, and black beans, and returned the chicken to the pot. Finally, she added a masa slurry, which is a combination of masa mixed with water.
“And, as it cooks, it’s gonna slightly thicken the soup and it’s also going to add just sort of an underlying flavor of tortillas because it’s corn flour,” she explained.
The Food Network host let it come to a boil, then reduced the heat, and let the soup simmer for 20 minutes.
To serve the soup, Drummond first cut corn tortillas into strips and placed some in a bowl, then ladled in the soup. There were plenty of “fixins” to amp up her already incredible soup.
Drummond topped the soup with more tortilla strips and added a squeeze of lime, queso fresco, pico de gallo, sour cream, and green onions.
“You know what I love about it is that it’s not like a heavy tomato soup and it’s not too brothy,” she shared. “It’s sort of in-between.”
