On her Pioneer Woman website, the Food Network personality writes that it’s “one of my—but most definitely my kids’—favorite way to use up leftover ham.”
Reviewers on Food Network’s (FN) site overwhelmingly agreed, saying, “Amazing! Huge hit with the family. A great way to use leftover ham. I used cheddar and only had skim milk. Came out great!!! Drummond says on Food Network’s site of this recipe, “These casseroles freeze beautifully! Just flash-freeze them on a baking sheet, then transfer to plastic zipper bags. Thaw and reheat in the microwave when you’re ready to serve.”
While the mother of four recommends ham, cheddar, bell pepper, chili powder, and onions in these egg casseroles, you can customize them to your liking with the addition of any vegetables you enjoy, as reviewers noted.
“Easy to make and tasty! I used red pepper and rosemary ham; next time I will increase the salt, pepper and chili powder. I will also sprinkle grated parmesan on the top of the egg mixture when I put them in the oven,” one home cook said.
