Ree Drummond has the perfect make-ahead breakfast casserole recipe that can be stored in the freezer so it’s ready at a moment’s notice. The Pioneer Woman star uses a quick shortcut ingredient that’s loaded with flavor for her simple breakfast dish.

Ree Drummond makes a flavorful breakfast casserole

Drummond made her herbalicious breakfast casserole during an episode of The Pioneer Woman dedicated to breakfast freezer recipes.

“In addition to individual things, I also like to make big hearty family-style dishes to put in the freezer for breakfast,” she said. “I’m making an herbalicious breakfast casserole. It is a play on an old casserole my mom and her friends used to make. It’s totally delicious.”

She added, “I love knowing that one is in the freezer ready to go.”

The Food Network star ripped onion rolls and placed them on the bottom of a baking dish. She cut jarred roasted red peppers into strips and sprinkled them over the bread. “Roasted red peppers are always a delicious thing to add to breakfast casseroles,” Drummond said.

She placed chunks of cream cheese among the bread and peppers. “When the casserole eventually bakes in the oven, the clumps of cream cheese just kind of soften and melt,” she noted.

Drummond sprinkled grated mozzarella cheese over the top and dotted the casserole with butter. “Trust me, this butter kind of soaks into the bread,” she explained.

The Pioneer Woman star whisked together eggs, milk, pesto, fresh parsley, fresh oregano, salt, and pepper and poured the mixture over the casserole. “You want it to slowly soak into all those chunks of bread,” Drummond said.

She covered the pan with plastic wrap, then wrapped it tightly in aluminum foil. Drummond placed the casserole in the freezer and, when ready to serve the dish, she removed the plastic wrap and cooked it from frozen in a 350 degree Fahrenheit oven for 45 minutes covered with foil.

The Food Network host removed the foil and let the casserole cook for another 10 minutes.

Drummond’s breakfast casserole recipe is a winner, based on the reviews left on the Food Network site. “Loved this! So easy to prepare ahead and my family loved it,” one reviewer shared.

“Made this for our annual family gathering and it was an absolute hit,” one person noted. “Perfect balance of flavors. Loved that it could be made ahead to minimize my effort on the day I served this.”

Other reviewers offered up suggestions, such as using less pesto and less butter, substituting onion bagels for rolls, and adding breakfast sausage to the casserole.
