Ree Drummond has an easy chicken pot pie recipe that doesn’t skimp on flavor. The Pioneer Woman star’s quick spin on a classic comfort food is one of her 16-minute meals with a few shortcuts.

Ree Drummond makes chicken pot pie in just 16 minutes

Drummond demonstrated how to make her quick recipe on an episode of The Pioneer Woman. “Of all the comfort food classics that I could turn into a 16-minute meal, I bet you would never expect that chicken pot pie would be on the list,” she said. “Well you are about to be amazed.”

The Food Network host added, “I’m going to show you how to whip up a chicken pot pie in 16 minutes flat — maybe even 15 ½ if I play my cards right.”

She shared any easy tip about cutting carrots, onions, and celery for the recipe. “And the secret to making 16-minute meals is to dice your veggies pretty fine because I don’t have a lot of time for them to cook,” Drummond explained

The Pioneer Woman star also diced the chicken in very small pieces before adding to a hot skillet with butter. She seasoned the chicken with salt and pepper, then added the vegetables. “If I were taking my own sweet time making a chicken pot pie, I would probably leisurely cook the chicken in a pot, add the veggies gradually,” she explained. “This is a 16-minute meal so these are the steps that I’ve figured out that can help me pull that off.”

‘The Pioneer Woman’ star uses a shortcut for pie crust

One of Drummond’s shortcuts for the deconstructed chicken pot pie recipe is puff pastry. “I am not going to have time to make my own pie crust for the chicken pot pie and puff pastry is an amazing shortcut,” she explained. “You won’t believe how great it looks.”

Drummond opened up a sheet of puff pastry and flattened it with a rolling pin before cutting out two big circles. She placed the pastry on a parchment-lined sheet pan and poked it with a fork. Then Drummond brushed on a beaten egg and seasoned it with salt and pepper.

“It’s fine if you don’t brush the puff pastry but I just think it makes it look nice and golden and beautiful,” Drummond explained. She baked the pastry circles in a 425 degree Fahrenheit oven for 10 minutes.

Drummond’s pot pie sauce is full of ‘richness’

Drummond made the sauce next, calling it “arguably the best part of chicken pot pie.”

The Pioneer Woman star sprinkled flour and turmeric in the skillet and stirred and cooked the ingredients for a couple of minutes. Then she added warm chicken broth. Drummond turned up the heat and, for a creamy chicken pot pie, added half and half for “richness and thickness.”

Once the mixture was heated and thickened, Drummond sprinkled fresh thyme and rosemary over the sauce, then added frozen peas. She spooned the mixture into bowls, then topped them with the puff pastry “crust.”
