Ree Drummond’s ice cream sandwich cake is a winner
Drummond has developed an ice cream cake recipe that’s perfect for all ages. She wrote about the amazing dessert in a 2020 The Pioneer Woman blog post, noting, “Oh my word, I have to show you this dessert. I’ll try to post directions soon… but a recipe isn’t even required.”
“It’s an ice cream cake made out of… ice cream sandwiches!,” she continued. “Basically, you unwrap a bunch of ice cream sandwiches, arrange them in a square pan in a single layer, top with a layer of softened ice cream (your choice of color/flavor), add another layer of sandwiches, another layer of ice cream… then a container of thawed ‘non-dairy whipped topping’ out of the freezer, otherwise known as Cool Whip, otherwise known as one of the 300 reasons I will never win a James Beard award.”
“Line the pan first with parchment hanging over the sides, then freeze the cake… then it’ll lift right out and you can slice it. So fun and so darn easy!,” she added.
Ree Drummond’s ice cream sandwich cake is so simple and so good
Drummond’s ice cream sandwich cake has just a handful of store-bought ingredients: ice cream sandwiches, strawberry ice cream, cookies and cream ice cream, and a container of whipped topping.
The “recipe” involves some creative layering and a bit of time in the freezer. Drummond lines the bottom and sides of an 8-inch square cake pan with two pieces of aluminum foil that hang over the sides.
She begins by putting a layer of ice cream sandwiches in the bottom and breaks them as necessary to fit in all the open spaces. Drummond spreads softened strawberry ice cream over the sandwiches, adds another layer of ice cream sandwiches, and tops it with the cookies and cream ice cream.
Drummond finishes the dessert by spreading whipped cream over the top and adding a bit of sprinkles for color. She freezes the ice cream sandwich cake for an hour before removing from the pan and slicing.

‘The Pioneer Woman’ star makes another customizable ice cream cake
Drummond has another make-ahead ice cream cake that’s a bit more traditional. She takes an easy shortcut, however, that makes the process just as quick as her ice cream sandwich dessert.
“I started with a frozen store-bought pound cake,” she said on The Pioneer Woman cooking show. She cut the cake into three slices and layered it with ice cream and candy in a loaf pan lined with plastic wrap.
After placing the first piece of cake in the pan, Drummond spreads vanilla ice cream over it and sprinkles chopped peanut butter cups on it. After putting in the second layer of cake, she spreads chocolate ice cream and a sprinkle of chopped chocolate candy over it.
Following the last layer of cake, she spreads chocolate chip ice cream on top, with a layer of chocolate sauce that hardens quickly. Of course, she adds a final sprinkle of candy!
