Ree Drummond celebrates her birthday on January 6. The Pioneer Woman likes to prepare a special meal on birthdays, whether it’s for her children or her husband, Ladd. Here are some of Drummond’s favorite foods to eat on her birthday.

Mini turkey meatloaves

During The Pioneer Woman Season 17 Episode 12, titled “Happy Birthday to Me,” Drummond made a special birthday dinner. That year, she decided to make a lighter version of the recipes she usually prepares. One recipe she included was mini turkey meatloaves.

Drummond starts by using old-fashioned oats instead of white bread. She says she normally uses half a loaf of white bread with her meatloaf. Drummond says oats are a good substitute for bread if you’re trying to avoid flour.

She then soaks the mixture in milk before adding it to the meatloaf mix. For the meat, she uses ground turkey instead of beef. She adds flavor by using seasoned salt, red pepper flakes, red pepper, chopped bacon, chopped parsley, and ketchup. After mixing all the ingredients, Drummond scoops the mixture into muffin cups. Drummond starts by cutting potatoes into wedges. She then places the potatoes into a bowl and covers them with olive oil, salt, pepper, grated garlic, and chili powder. Drummond prefers not to chop the garlic because she says they would likely burn in the oven.

Then, the Accidental Country Girl mixes the potatoes and seasoning in a bowl and places them on a cooking sheet pan. She bakes them at 450 degrees for 30 minutes. You can get the recipe for Drummond’s baked chili garlic fries here.

Cauliflower mac and cheese

Drummond says cauliflower mac and cheese is a “no-flour, lower-carb version” of the classic. “There’s nothing about it that’s not delicious,” says Drummond. She starts by melting butter in milk. Then, she adds dry mustard powder and a splash of hot sauce.

Although Drummond calls this cauliflower mac and cheese, she says there is no macaroni in this meal. Instead, cauliflower is a substitute for macaroni. Next, Drummond grates one cup of cheese. She prefers to use pepper jack cheese because it has a little spice in it, and when it melts, it has a creamy consistency. She also adds goat cheese. Flourless chocolate cake

A birthday celebration isn’t complete without cake. Drummond says she always makes a chocolate sheet cake when a family member has a birthday. For her birthday, she decided to make a lighter version of the decadent cake she usually bakes. Drummond demonstrated how to make the perfect chocolate birthday cake without flour.

For this recipe, Drummond uses two sticks of butter, eight ounces of chopped, semi-sweet chocolate, ¾ cup of sugar, ¼ cup of brown sugar, 6 large eggs, ½ cup of cocoa powder, 1 tablespoon of vanilla extract, and a pinch of salt. Get the full ingredients list and directions here.
