Ree Drummond loves a good food mash-up so it’s not surprising that she gave quesadillas a delicious taco twist. The Pioneer Woman star shared her easy recipe that combines two food favorites.

Ree Drummond shares her taco quesadillas recipe

Drummond demonstrated how to make her taco quesadillas on an episode of The Pioneer Woman dedicated to food to munch on while watching a football game.

“Tex Mex food is a no-brainer when it comes to watching games on TV,” she said. “I can’t tell you how many times I’ve served tacos when we’ve watched a football game, quesadillas … all the good Tex Mex things in life. I’m going to make a delightful mash-up of taco quesadillas.”

She browned ground beef in a skillet and seasoned it with chili powder, cayenne pepper, cumin, and salt. “Now you can add anything you want to your taco meat,” Drummond noted. “I like it to have a little bit of a tomato sauciness. So I’ve got some tomato paste and I’ll add it in.”

The Pioneer Woman star added water and cooked the meat mixture, then reduced the heat. “It’s always fun to think of new mash-up ideas and game night is the perfect time to experiment,” Drummond said. “It’s not a sit-down family meal. It’s just for fun. So if you try a mash-up and it doesn’t exactly work — no harm, no foul.”

In another skillet, she melted butter and placed a tortilla in the pan. “Quesadillas are usually made with flour tortillas,” Drummond noted. “That’s the way I’ve always eaten them but lately I have really enjoyed corn tortilla quesadillas.” She topped it with Monterey jack cheese and added another tortilla on top. Once the first side browned, she flipped the quesadilla.

Drummond had some additional toppings for her mash-up creation. “As much Tex Mex food as my family eats, it would be unheard of for me not to have a bowl of pico in the fridge,” she said.

The Food Network host made the easy pico de gallo by stirring together diced tomatoes, onion, cilantro, salt, lime juice, and diced jalapenos in a bowl.

She shredded lettuce while she explained how the taco component of the quesadilla is made. “Basically the quesadilla is going to serve as the taco shell for the tacos,” she said. “I really lost my marbles with this one.”

To serve the dish, Drummond removed the quesadilla from the pan and placed it on a plate, then topped it with the meat mixture, shredded lettuce, and pico de gallo.

“I had hopes that I would fold this in and eat it but I think this is the type of thing that’s gonna have to be enjoyed with a fork,” she said. “A taco quesadilla — perfect for game night or any night, for that matter.”
