If you’re looking for something different to eat for breakfast, Ree Drummond has a treat for you. The Pioneer Woman shared a delicious recipe recently added to The Pioneer Woman Mercantile restaurant menu. Here’s how to make hot cocoa pancakes.

Chocolate is usually reserved for dessert, but at The Pioneer Woman Mercantile restaurant, you can have chocolate for breakfast. Chef Tim, the general manager at The Mercantile, made a special batch of hot cocoa pancakes just for Drummond so she could do a taste test before they were added to the menu. The Food Network star says these pancakes are “delicious.”

Drummond stopped by The Pioneer Woman Mercantile kitchen so she could see how the pancakes are made. Tim starts off with two different flours. He makes a dry mix and a wet mix. Some of the ingredients you’ll need for these pancakes are self-rising flour, all-purpose flour, granulated sugar, cocoa powder, salt, baking powder, and baking soda. Chef Tim says the baking soda and baking powder help make the pancakes fluffy.

For the wet ingredients, Tim uses whole milk, heavy cream, 6 large eggs, vanilla extract, and crème fraiche. Next, he adds the wet ingredients to the dry ingredients. “There’s no right or wrong way, honestly, to do this,” he says in Drummond’s discovery+ special.

Cooking the hot cocoa pancakes

Drummond was impressed with how “chocolatey” the batter was. “Gosh, that is a chocolatey batter, Chef Tim,” says Drummond. After Tim mixes the batter, he places about ½ cup of the mixture in the pan. Drummond notes that it doesn’t matter how thick the batter is because it gets spread around during the cooking process.

Next, Tim places chocolate chips on top of the batter. “We have to make them as chocolatey as possible,” says Tim. He says he uses milk chocolate chips. Once the pancakes are done cooking, he drizzles chocolate sauce on top. Then, he places marshmallow cream on top of the chocolate sauce. Drummond says the marshmallow cream is “the star of the show.” After that, he places a few chocolate curls on top of the cream. Tim tops everything off with green and red sprinkles. Drummond had a Christmas sleepover with her sister, Betsy, and her mother Gerre. The next morning, she decided to order room service for breakfast. Drummond surprised her family with coffee, bacon, sausage, and hot cocoa pancakes, which is a new holiday menu offering at The Mercantile restaurant.

Drummond’s mother took one look at the pancakes and asked, “Is it a cake or a pancake?” Drummond said it’s “very much like a piece of cake.” Gerre says she loves the marshmallow cream because it looks like “lava” running down the side of the pancake. It looks like the new hot cocoa pancakes will be a hit at The Mercantile.
