‘The Pioneer Woman’: Ree Drummond’s Italian Meatball Skewers Is an Easy Family-Friendly Recipe
Ree Drummond has the easiest recipe your family will love — and, best of all, she uses a couple of quick hacks that cut the cooking time by a mile. The Pioneer Woman star shared her Italian meatball skewers recipe that’s made with just a handful of ingredients.

Drummond demonstrated how to make her Italian meatball skewers recipe on an episode of The Pioneer Woman dedicated to “fast, delicious” dishes. “I’m going to make a super family-friendly dish,” she said.
The Food Network host got to work building her skewers by loading each one with chunks of “regular Italian bread,” meatballs, and vegetables.
Drummond clued viewers into her easy store-bought shortcut ingredient: frozen Italian meatballs.
“It makes this an unbelievably easy dish. All I’m doing is building skewers,” she explained. Drummond pointed out the arrangement: “a chunk of Italian bread and then a chunk of green pepper and a meatball and a big chunk of red onion.”
“And then just kind of do whatever order you want just to make sure you get a little bit of everything on the skewer,” she added.

Drummond preheated a grill pan over medium-high heat and brushed the skewer ingredients with dressing. “I think a grill pan is super easy,” she said. “And another thing that’s super easy is brushing them with bottled Italian dressing.”
She added, “How much easier is this than getting oils and vinegars and herbs and all the things that it takes to make your own Italian dressing?”
Drummond brushed it over the skewers. “Basically you want to get that Italian dressing all over the bread … and the good thing about using frozen meatballs is that they’re already fully cooked so really, I’m just grilling the vegetables and bread and warming up the meatballs.”
The Pioneer Woman star shared that she thawed the meatballs before adding them to the skewers.
She placed the skewers on the grill pan, noting, “And you want the grill pan to be pretty hot because you want to get that bread really, really kind of blackened and toasty.” She brushed the second side while the skewers were on the grill pan.
Drummond grilled both sides until the bread and vegetables were browned and the meatballs were heated through. She served them on a platter with warm marinara sauce on the side and sprinkled parmesan cheese and parsley over the top of the skewers.
