‘The Pioneer Woman’ Ree Drummond Makes Her Grandmother’s Recipes
The Pioneer Woman took a trip down memory lane and made some of the best recipes her grandmother used to prepare. Ree Drummond showed home cooks how to make her grandmother’s retro Salisbury steak, skillet scalloped potatoes, green beans, and apple crisp. Here’s how to make these delicious recipes.
Ree Drummond’s retro Salisbury steak
Drummond starts by making the meat mixture. The Salisbury steak mixture is made of ground beef, seasoned breadcrumbs, dry mustard, 1 tablespoon of French onion soup mix, a spoonful of ketchup, salt, pepper, and Worcestershire sauce.
Drummond says making Salisbury steak requires taking a piece of the burger meat and forming it into an oval shape so that it looks like a steak. For the next step, she instructs home cooks to use the side of their hand to create ridges in the meat so that it cooks like a steak. Next, Drummond places the meat inside (ridge-side down) a pan with olive oil and butter. She cooks the side with the ridges first and then flips the meat over to cook the other side. Ree Drummond’s scalloped potatoes
Drummond prepares a skillet version of scalloped potatoes that she finishes cooking under the broiler. She starts by adding sliced Yukon gold potatoes to a large skillet with melted butter. Next, she sprinkles a generous amount of salt and pepper on top of the potatoes.
Drummond then adds thinly sliced onions and garlic. She says it’s important for the onions to be thin, so they not only soften but also cook well. Drummond cooks the potato and onion mixture for 6 to 7 minutes. Once the onions and potatoes begin to soften, she adds heavy cream. She reminds home cooks to stir the mixture, so the potatoes and onions get coated in the cream.
Drummond places the lid on the pan and allows the potatoes to cook for another 6 or 7 minutes. Once the potatoes finish cooking, she turns off the heat and adds strips of ham. Next. Drummond places the potatoes under the broiler and cooks them until the cheese is bubbly. You can find the complete ingredients list and directions here.
Ree Drummond’s green beans
If you want to try a new tasty vegetable recipe, try Drummond’s green beans. She starts her green bean recipe by frying bacon. Once the bacon is fried, she pours off all the grease except for about one or two tablespoons. Next, she turns up the heat and adds thinly sliced red onions. Then she adds fresh, diced jalapeños for a new twist on her grandmother’s recipe.
Next, Drummond adds garlic powder. She adds a cup of beef broth or beef stock along with “plenty of salt and pepper.” She says you can also use chicken stock or vegetable stock for this recipe.
Drummond then places green beans in a pan. She says she purchased them already trimmed. She tosses the green beans so that they get coated with the onion and jalapeño mixture. Then she turns the heat down to the low setting and puts the lid on the pan. She advises home cooks to lift the lid slightly on the side so that some of the heat can escape. Drummond cooks the green beans for 10 to 12 minutes “until they’re tender but still have a little bite to them.” You can find the complete ingredients list and directions here.
Ree Drummond’s go-to apple crisp
Drummond starts by making the apple crisp topping first. The topping includes flour, oats, brown sugar, and pecans. She also adds two pinches of salt to the mixture. She says this gives the mix a salty and sweet taste. Then Drummond adds ½ teaspoon of baking powder and ½ teaspoon of baking soda. She stirs the mixture while adding melted butter.
Drummond stirs the mixture until it forms a crumb consistency. For the next step, she uses a “superhero shortcut” by incorporating two cans of apple pie filling. She spreads out the apples in a pan and shakes the crisp topping on top. Drummond bakes the apple crisp at 350 degrees for about 40 minutes. You can find the complete ingredients and directions here.
