‘The Pioneer Woman’ Ree Drummond’s Pesto Egg Toast Recipe Will Make You Forget About Plain Toast With Butter

Ree Drummond’s pesto egg toast recipe
If you love the taste of pesto and you love toast, you’re in for a treat. Drummond’s recipe will knock your socks off. During her show, Drummond says the reason pesto toast is popular is because the pesto has oil as a base. “It serves as the ‘oil’ or ‘butter’ for the eggs,” she explains. Drummond starts by cracking two eggs in a pan. While the eggs cook, Drummond prepares the toast.
For the toast, Drummond uses thick-sliced sourdough bread and roasted garlic aioli. “It’s kind of a fancy way of saying mayonnaise, but it’s got roasted garlic in it,” she says. Next, she places sliced gouda cheese on top of the bread and garlic aioli.
Making the cheese bread
Drummond places the bread under the broiler and cooks it until the cheese melts and it becomes bubbly. She says it doesn’t take long for the cheese to reach this point. While the bread is heating up, Drummond sprinkles salt, pepper, and crushed red pepper flakes over the eggs. She says the red pepper flakes add a bit of “heat” to the dish.
Next, she flips over the eggs (she says you can use a spatula or “the wrist that God gave you”). After cooking the eggs, Drummond takes the bread out of the oven. “Of all the things we have made, this is my favorite of all time,” says Drummond. “Cheese toast.”
For the next step, Drummond places sliced heirloom tomatoes on top of the cheese. She then adds a piece of basil in between each slice of tomato. After that, she places the pesto eggs on top of the tomatoes and sprinkles them with sea salt. Drummond was so enthralled with her creation that she ended her show by saying, “If you’ll excuse me, I need to be alone with this.” You can find the complete recipe here.
Ree Drummond’s tortilla breakfast bake
Another recipe Drummond likes to make for breakfast is her tortilla breakfast bake. This is a flavorful, filling way to start the day. The breakfast bake is filled with vegetables and covered with a fresh tortilla.
Drummond describes this recipe as “so good, so flavorful, and really, really fun to make.” She adds vegetables (sliced onion, sliced green bell peppers, and sliced mushrooms) to a 10-inch iron skillet. She makes sure to raise the flame because she wants to char the vegetables.
