‘The Pioneer Woman’: Ree Drummond’s Roasted Greek Salad is ‘Incredibly Delicious and Flavorful’
The Pioneer Woman star Ree Drummond has devised a delightful combination of hot and cold elements to create a Roasted Greek Salad recipe. This crunchy and cool sheet pan meal is full of delicious vegetables and cheese, with a tangy vinaigrette dressing. The Food Network star calls her creation “incredibly delicious and flavorful.” Best of all, it comes together in less than one hour and is perfect for large get-togethers.
Ree Drummond is ‘on board’ with sheet pan salad recipes
In her 2021 book, The Pioneer Woman Cooks: Super Easy!, Drummond explained her love for this particular style of cooking.
“I am 100 percent on board with this new genre of sheet pan salads,” Drummond wrote.
“They’re incredibly delicious and go something like this. Roast some of the ingredients (usually vegetables and protein) until browned and flavorful. Let everything cook for a bit,” she explained.
“Then, dump on a bunch of cold, fresh ingredients and toss with dressing.”
Drummond called this salad a “best of both worlds scenario.”
She joked that in the winter “when the world is a sea of brown and there’s nothing growing in my garden but desolation” she tries to see how many different varieties of sheet pan salads she can come up with.
Roasted Salad is one of Ree Drummond’s favorites
Drummond calls this particular salad one of her “favorites.”
She enjoys eating it as a main dish. However, you can pair it with the grilled protein of your choice on the side, or even include it into the components of the salad to make the sheet pan supper a complete meal.
The overall finished dish contains 6 to 8 servings.
Variations on the dish, per Drummond’s book, include using Halloumi cheese in place of the Feta.
Also, you can top the finished salad with shaved Parmesan cheese.
If you don’t have fresh bell peppers on hand, you can utilize jarred roasted red peppers in thier place.
How to make The Pioneer Woman’s Roasted Greek Salad
The ingredients to make Ree Drummond’s Roasted Greek Salad are traditional.
These include olive oil, oregano, salt, pepper, garlic, tomatoes, peppers, feta and lemons.
Also needed are cucumbers (Drummond specifies English, but you can use whatever you have available), black olives, red onion and dill.
Begin by roasting the vegetables and cheese. These include the tomatoes, bell peppers and feta as well as lemon halves, all tossed with olive oil, oregano, salt, pepper and garlic.
Once the vegetables and cheese have roasted, toss with the remaining ingredients. Add the roasted lemons to the salad as well for an extra tangy and juicy flavor to the finished dish.
