Drummond is always excited to make these steak bites because she says they’re “Ladd Drummond approved.” She describes Ladd as a “meat and potatoes” type, so she’s happy to find recipes he enjoys. She says it doesn’t get more Ladd friendly than steak bites. Drummond declares her recipe is so good that it will “change the way you feel about steak bites.”
Drummond starts by cooking chunks of ribeye steak. She says the fat is where the flavor comes from. However, she prefers to cut off the big pieces of fat and gristle. She tosses the beef in melted butter and grill seasoning. However, she says you can use the seasoning you like best.
The Accidental Country Girl says the secret to the perfect steak bite is to use a good cut of beef. She says beef tenderloin is a good option for this recipe. “A little bit on the pricey side, but if you really want to impress your guests, that’s the trick,” says Drummond on The Pioneer Woman show.
Drummond recommends pushing the steak into a single layer as you cook it. She says it’s best to get a large skillet when preparing this meal so you can make everything in one batch. For the first minute, Drummond allows the steak to sear. Then, she begins to flip and stir the meat. She cooks the beef for 3 to 4 minutes until it’s medium rare.

Next, Drummond removes the steaks and adds butter to the skillet. Then, she adds minced rosemary. “It kind of adds a little bit of elegance to whatever you’re making,” says Drummond. “It really goes with beef. There’s something about rosemary and beef that just knocks my socks off,” she tells her TV viewers. Next, she adds blue cheese sauce, horseradish, blue cheese, chives, and black pepper. Drummond says horseradish is “very beef friendly.” She stirs the mixture as it cooks so that it doesn’t burn.
After making the blue cheese cream, Drummond places the steak bites in a serving dish. She then pours the blue cheese cream into a bowl for dipping. The first meal Ree Drummond ever cooked for Ladd
Drummond once told the story of the first time she cooked for Ladd. She was trying her best to impress him, so she made linguini with clam sauce. One thing she didn’t realize was that Ladd isn’t a fan of anything that’s not meat-based. She was a vegetarian at the time, so Drummond wanted to make a dish without meat in it. The night didn’t go as planned.
The Food Network star says Ladd didn’t enjoy the meal, but he tried his best to get through it and eat the food placed in front of him. She joked that it was the “longest meal of Ladd’s life.”
