Already made pizza salad and looking for another salad recipe from Trisha’s Southern Kitchen? Trisha Yearwood’s salad with mandarin oranges is easy to make and celebrity-approved. The Grammy winner-turned Food Network star once had Kelly Clarkson on her cooking show. Together, the singers prepared a meal including Yearwood’s Sweet and Crunchy Garden Salad which the “Never Enough” singer loved.

Yearwood’s no stranger to having guests join her on Trisha’s Southern Kitchen. She once prepared game day snacks, such as slow cooker corn dip, for the Nashville Predators. And, of course, in another Clarkson stopped by.

On the “Kelly Clarkson in the Kitchen” episode of Trisha’s Southern Kitchen, the now-39-year-old joined Yearwood in the kitchen. 

“Kelly Clarkson is in my kitchen today,” Yearwood said. “You know her as the original American Idol. She’s won Grammys. She’s sold millions of records worldwide. But she’s also the sweetest, funniest, most down-to-earth woman I’ve ever met. Now, Kelly’s on tour so she’s got a day off in between gigs and she’s going to spend it with me.”

Featuring recipes from Yearwood’s cookbooks, Georgia Cooking in an Oklahoma Kitchen and Home Cooking with Trisha Yearwood, the “How Do I Live” singer and Clarkson didn’t just make the salad with mandarin oranges. Also on the menu were pork chops, corn salsa, and no-bake chocolate peanut butter squares.

Yearwood’s salad with mandarin oranges gets some crunch from roasted almonds

Part of what makes Yearwood’s Sweet and Crunchy Garden Salad special is the mix-ins. In addition to mandarin oranges, slivered almonds are in the salad too.

“I am really excited about this salad. I really do love crunchy anything,” Clarkson, a self-professed crunchy salad lover, said as she chopped iceberg and romaine lettuce. 

With Yearwood standing nearby at the stove, she explained how to make the almonds. “This is the crunch part,” she said. “It’s about a cup of slivered almonds and about a quarter cup of sugar. And when you put this in a pan and heat it the sugar melts over the almonds and it gives it a really nice, sweet crunch.” 

“Oh, that sugary goodness does look good,” Clarkson remarked. And, as Yearwood pointed out, the sugar melts quickly. With the sugar completely melted, the “She’s In Love With the Boy” singer took the almonds off the heat and set them aside to cool. “I just want to eat them,” Clarkson said. The now-talk show host resisted the temptation and continued on with the salad-making process.

After preparing a simple vinaigrette dressing Yearwood advised Clarkson to keep all the elements of the salad separate until serving.  “Put this together right before you serve it so it doesn’t get soggy,” she said. “Everything can stay in the fridge and get cold.”

She also offered a word of caution regarding the mandarin oranges: “They’ll tend to fall apart if you’re not careful.”

“Soggy salad, not good,” Clarkson said, to which Yearwood replied, “Nobody likes a soggy salad.”
